Player Peak and Regression Settings

I keep finding players reaching their peaks around 22-24 years old, but from my understanding position players typically reach their peak around 26, and then start to decline around 31

I haven't messed with this setting too much, any suggestions or links where I can find better suggested numbers?

The established wisdom is that the prime in baseball tends to be from 26-29, although individual players can always have earlier or later prime years for a variety of reasons.

that part I agree with, what part I don't know is what settings I need to replicate that realism?

I keep finding players at their peak skill set at too early of an age (I use the 20-80 scale, not the stars) and I see 23 year olds at 44/44 overall for example.

The default settings ought to produce that, although there was a bug earlier in the year that was causing younger players to develop too quickly IIRC. It also of course depends on the individual player skills; it would not be out of the ordinary to see a player whose skill set was all speed and defense to be maxed out at 23, for example.

i would think the aging modifiers (slow down aging) would help.......i personally don't see it, but that is what i think it is intended for
