Bunt ratings are always on 1-5 scale.

No matter what ratings scale I’m using in my league, the Sacrifice bunt and Bunt for hit ratings of my players always use the 1-5 scale.

yeah, all the bunt catagories are locked at 1-5. Also, the hold runners rating for pitchers.

My guess is that there just isn't as much variability built into these ratings between players.

An interesting theory, but I see no evidence (besides the limited rating presentation) to support it. Other ratings can be presented simply on the 1-5 scale, although they are, in reality, more detailed than that.

It is possible though.
Right, the reason I say it is that when you turn the editor on, you don't have the capability of adjusting these on any scale other than 1-5, whereas other ratings you can use the 100+ pt scale.
