Are these options before or after the 2055 season? Which Off-season?

Those are opt outs. I’m almost certain it means a player can opt out after that season, potentially making them free agents. If you check in the contract section of each player card, it will be more clear, since they would show something like this (I think, don’t have the game in front of me):

2021 1.5mil
2022 1.4 mil
OPT OUT
2023 1.4 Mil
2024 1.4 mil
