AI or bench coach

The option to have ai set defense. Shouldn't there be an option to have the bench Coach set defense also?

Agree, and - as you probably were thinking - the GM can choose (or modify) the tendencies and strategy of the bench coach, so you should know what you are getting. As compared to the AI default or random approach to defense.

With less than two outs, runner on first, slow batter, I typically will change the defense to DP depth. I’m sure I give up a few more singles in the holes; but this often works (typically have to hold the runner, or he will take out the pivot man and prevent the DP). Would be great to have bench coach who would reliably recognize that situation and set the defense accordingly.

My understanding of the "AI to set initial defense" option is that it sets it based on the Strategy settings (either set by the user, or chosen by the Manager/Bench Coach that oversees it).
