is there any way to change information shown for the players that are being offered? would like to be able to see thier potential or their current contract/salary for instance instead of havingto click through 40 players every time

I don't have that problem. I see salary, years left, Overall and Potential stars. Maybe you have different settings, or maybe too low of a resolution?

There is still a problem where players have signed an extension the info does not show. That means you have to click on many players that show 1yr left
