Barely any star players being re-signed by their teams

So i'm playing a fictional league and i've noticed that about 90 to 95% of players that are to be free agents at the end of the season don't get a contract and leave their respective clubs. This wouldn't be a big deal but it pretty much seems like superstars never re-sign with their club which makes the game less immersive and realistic to me. The only think i can imagine is happening is that the superstars are asking for outlandish contracts such as 40 million per year, the team doesn't feel they are worth it and let them walk to free agency only to see said superstar sign a more reasonable contract, for say say 25-30 million per years to in the off season.
