Bullpen Change Issue
I don't know if this has been posted, but if I for example bring in a lefty to face a lefty and then the other team pinch hits and brings in a righty, the game doesn't let me take out the lefty to now bring in a righty. They force the lefty to pitch to that batter.

That's MLB rules. If you bring in a pitcher he has to face one batter.

An important distinction to make is that a pitcher must face one batter or retire the side.
OOTP can't quite track "retire the side", so a workaround is needed. In OOTP terms, for a pitcher to be replaced, they must have faced one batter or been listed as pitcher during the team's most recent half-inning at bat. (Even then, I'm simplifying OOTP's definition a bit - there are a few issues with pitchers injured on the third out and whatnot.) Furthermore, I'm not aware of whether OOTP allows pitchers to take non-pitcher positions twice during the same half-inning, but that's another thing entirely.
