Minor League Contracts w/ Opt-Out clauses

I've noticed that AI teams manage to sign players to minor league deals with opt out clauses that the player can exercise if not on the MLB roster by a certain date. I haven't been able to figure out how to do this myself, though. Is this something human controlled teams can do, or is it limited to the AI? If it's limited to the AI, why?

1 - Go to the player's negotiation screen
2 - Under the large quote box thing that shows the player's demand & negotiation mood is a dropdown box
3 - Click it & select Minor League with Major League Option

You can do it, it is on the player contract page where it says Major League contract, you should be able to select minor league with Opt out. I do it all the time, generally in the pre season or spring training. Harder in the hot stove period of the off season.
