Is there a specific category in the editor that makes a player more likely or less likely to reach their potential that is displayed on draft day?

Work ethic & intelligence are the closest to what you are asking that I can think of that is in the editor. The higher the work ethic the more likely a player will bump. The higher the intelligence the more likely the player will learn new positions thus more likely to bump defensive rating.

All in all, I think that the liklihood that a player will achieve his potentials is probably controlled globally and random in nature. You can control some factors such as playing time, level of competition, strength of coaching staff, maintaining morale and others.

Finally, work-ethic is not the be-all end-all either. Plenty of star players just have great natural talent that don't need to work hard.
