Yes its certainly possible. When you go to create your game, there is a historical option where you can choose to start in any year you wish. The draft pools for the following years will contain the real players that were drafted that year.
As for the ease, since pretty much everything is handled in game, I'd say its pretty easy.

In the new player draft each year I would like the draft pool to be from real life players who came into the league in that particular year. Then conduct my own draft. So when someone like Dwight Gooden is a rookie/first year player...he might get drafted by say...Pittsburgh.
