I was wondering if there was a simple way to change a players 'Gold' stars to 'Blue' and viseversa to allow for 'older' players to be viewed as 'Rookies', or youngsters to be 'Veterans'? Custom and Fictional players mostly.

If you edited a prospect's birthdate so that he's 26 or older, it would change his blue stars to gold. (You also might be able to edit his MLB service time, but I'm not sure if the "experience" requirement uses service time or games/AB/IP.)
I don't think you can do the same to turn veterans into prospects (gold to blue), because players younger than 26 will still be veterans if they have enough MLB experience.

All With Zero Experience

Well, you've confused me
... but if you changed a 37-year-old with no stats to a 20-year-old and he still has gold stars, other than making sure he has zero service time, I'm stumped.
