Contracts of Retired Players "Guaranteed"??
If I sign a guy to a 5 year contract, and he retires 2 years in to it. Am I responsible for his salary for all 5 years still, or does the retirement void the contract after his last season?

Yes, retirement will save you from paying the remainder of the contract.

Yes, in those cases, the player will retire at the end of the year.

Warning though if you release the player with the Career Ending Injury you will have to pay his salary, so make sure that you keep him until he retires at the end of the season.
