Contracts of Retired Players "Guaranteed"??

If I sign a guy to a 5 year contract, and he retires 2 years in to it. Am I responsible for his salary for all 5 years still, or does the retirement void the contract after his last season?

Yes, retirement will save you from paying the remainder of the contract.

Will the contract also be voided in the event of a 'career ending injury'?

Yes, in those cases, the player will retire at the end of the year.

Warning though if you release the player with the Career Ending Injury you will have to pay his salary, so make sure that you keep him until he retires at the end of the season.

The CPU isn't charged the length of the contract when they release players on their own accord.

Albert Belle wasnt released by the Orioles for Insurance Purposes.. not because he was money hungry or the Orioles couldn't pay his contract off.

You're half right. He was released for insurance purposes, that way Belle could make the money and the Orioles wouldn't have to pay the majority of the contract. Had he retired, he doesn't get paid. Had the Orioles released him, his full contract comes out of their pockets. The way they did it got Belle his money and saved the Orioles money.
