How do you keep the AI from putting the team into dumbass lineups that I don't want!?

The only way to guarantee it is to set seven day lineups.

7 day lineups, yeah. That's the best way to get full control. However if that's not an option, you can get pretty close by locking a few players to specific spots in the lineup as well, from the player strategy options.
