He throws only junk, so how about "Garbage Can" or "Trash Can"? Kind of like "Oil Can" Boyd.

Love all the suggestions thanks, still haven't decided on one yet.

I typed his name in an anagram solver webpage that lists words using the letters in his name and my favorite was "Raindance" from that list, as in what the other team is doing when he's scheduled to pitch.

How about "Handcuffs"? Its how batters feel trying to hit his Knuckler.

How about "Whiff" Canfield? That sounds like an old-fashioned baseball nickname, and it fittingly describes what opposing batters have been doing at the plate against him.

His performance is a bit unrealistic for a knuckleballer, though. Other than Phil Niekro for a couple of seasons in '77 and '78, my '87 season with the Rangers, and R.A. Dickey for one recent season with the Mets, there have been few instances of a knuckleballer getting well over 200 strikeouts in a season. And it's taking him far fewer innings to do it.

"Whiff" Canfield's K's per 9 innings is almost double what a knuckleball pitcher can achieve in his best season. But I suppose there's a first time for everything.

Just change his first name to R.A. ?

... or nickname to Dickey?
