I am not sure how the rule reads, but even if removing the helmet during a celebration is a penalty, there is no more time left to enforce it.

Sure, but the penalty in this case would have been enforced on the next play instead of on the current play.

I wonder if the XP was needed to win the game or go into OT, could the penalty yardage be assessed on the the try?

I'm not sure why the XP is needed...if it's returned, the return team only gets 2 points, so it wouldn't have mattered.

But, whatevs.

It would be assessed on the try in that case.

The game can't end on a penalty by the defense, the Vikings were on offense. Since there was no time left, game over.

Had there been any time remaining the penalty should be assessed on the following kickoff, not XP. So the Vikings would have kicked off from their 20. Extra point penalties are assessed during XP fouls as far as I know.
