How long is a 1 year contract?

I'm thinking about creating one or two Winter Leagues for my sim. I know there are no loans in this edition, but thinking if my league runs from Sept-Jan, limiting contracts to one year could fill the league with decent players.

It all depends when the one year contract ends. If it ends after Jan when the league ends or 1 year contracts are really 1 year long. The latter could screw my idea.

If those contracts end around January, all those players could play MLB after playing winter league.

It all depends on the league "season". When you sign a player on a 1 year deal, he will be on your team until the league's free agents file. Example is MLB players file for free agency in November.

Nice, is there a way to know when that date is? could it be under league settings?

I am not 100% sure if it shows dates (not at home at the moment), but you can see a list of upcoming league events in the League Events page, found by navigating to League Menu | News | League Events tab.It should show you when the below are going to happen:

Preseason
Spring Training
Opening Day
First-Year Player Draft
All-Star Game
Trading Deadline
Roster Expansion
Awards
Players File for Free Agency
Salary Arbitration Hearings
The Rule 5 Draft
Winter Meetings

If you are overpaying the player and cannot get rid of them during the season. Then a one year contract seems to last for an eternity.
