OOTP doesn't allow that loophole.
It's not really a loophole now since it is part of the rule. OOTP is more liberal for most of the replacement player eligibility but misses the critical in-series replacement available IRL.

OOTP also screws up eligible replacements for 60-day DL. Because these players are taken off the 40-man roster they show as ineligible for the playoffs. The work around is not to use the 60-day DL after roster expansion.

More work is needed on this feature.

There is no "loophole". The real-life rules provide that an eligible player injured and unable to play at the time the post-season begins can be replaced provided that (a) the club certifies to the commissioner's office that the player is indeed injured; (b) the replacement player was in the club's minor league organization from Aug. 31st through to the end of the regular season; (c) the replacement player is on the 40-man roster (if not on it already he would have to be added to it before he could play in the post-season); and (d) the commissioner's office approves the replacement.

The restriction requiring a pitcher to replace a pitcher and a non-pitcher to replace a non-pitcher was removed in 2007. Also at that time the ability to replace a player injured during a post-season series was added. Such replacement operates under the same principles as replacing an injured player before a post-season series except that the pitcher for pitcher and non-pitcher for non-pitcher restriction applies.

As to players on the DL as of Aug. 31st being playoff eligible, that's due to the assumption that, had they not been injured, they would have been with the club and on the roster. They are, in essence, given the benefit of the doubt.
