Would this work til the new update?

The new update will fix the relief pitcher warm up issue, which is only an issue if you play the entire game, rather than sim it. My question is, until the fix arrives, do you have to sim the rest of the game after a reliever enters or can you sim the half inning when your guy first enters, then resume playing from there?

I have been simming the half inning he enters game and resuming human control thereafter with good results.

As I can't seem to find the thread that declares it directly, I'm assuming that we've figured out that when playing games out relief pitchers suck because somewhere in the code they should be "warmed up" (like OOTP) and that's not happening ('cause it's not a feature of iOOTP)? And that a fix for said bug will make it into the next update?

Pretty much, yes. I had the update submitted before we discovered the bug but I was able to fix it, remove the update from Apple and submit a new version (with the fix). So 1.1.1 will have the fix.
