I was able to add logos to an existing league using iPhone explorer. The folder structure is pretty much the same as OOTP.

I put them in

’siPod/Apps/com.ootpdevelopments.iootp2011/Documents/iOOTP2011/saved_games/Game 1.lg/news/html/images

EDIT - is it possible to use iPhone explorer to backup a league or copy it from one device to another? One concern I have is losing a long-running league due to a bug, iOS crash or lost device.

They really do and it only took about 90 seconds to get them all loaded up and going. Awesome.
