to rig the FA period in the offseason? I'm trying to set up some up-to-date rosters in OOTP 6 so I simulated the 2006 season and now I'm in the offseason and trying to get people to their current teams but like guys like Zito don't like the team I need them to go on (the Giants).

Is there anyway to get around that? Or do I just have to sign him to another team and then trade him?

Set all teams to human manager and then only put in the bid for the player from the team that he is actually on.

Jeez my memory is fuzzy but isn't there some sort of editor tab? Maybe you can go into the editor and change his team?
