List of different moddable graphics?

Being new to OOTPB, can anyone tell me what graphics can be modified in the game as well as what folders things go into?

Hopefully we'll be able to present this info to you in a more detailed format over the next few weeks. We're scrambling a bit with the release just yesterday and all.
