changing positions

Does anybody know if changing a player's position while he in the minors stunts his growth as a hitter?

It is possible, especially if he tries and fails to make the change but it doesn't always have an impact.

In a related topic, if you play a major league guy out of position long enough, he will learn that postion, right?

Generally speaking, players can make the move to a similar position, even at the major league level. A catcher moving to 2B is something that will probably fail. A 2B or SS moving to 3B, or any player moving to 1B will generally be successful.

He "can" but in an online league I am in I played a 2B in the OF for more than 2 seasons and he never learned the position-although he did a good job fielding.
