I've not come across this situation myself (lucky I guess), but I think the following might work:

-write down player's contract info
-turn off finances (so expenses are not added when player is released)
-release player from old team
-turn on finances
-have new team sign player as a FA for old contract

Maybe someone who has dealt with this situation can help.
