If they tried to get the out at home you typically cannot assume the runner would have been safe at first (so it would be ruled a Fielder's Choice)...although it is a judgment call.
If the defense tried to get the out at 1st and the runner beat it out or the defense did not make a play at all, it should be given a base hit.
I would not be surprised if OOTP, though, does not distinguish between those two scenarios and just goes with a Fielder's Choice every time (as that is the most common scoring result).

I'm fairly certain OOTP scores plays that are really the judgement of the 'official scorer', the same way every time.
IRL... I have seen a batter lay down a squeeze bunt and get credited with a base hit. The play went to the plate and the runner was safe. The scorer determined that there was no way they were going to throw out the batter at 1B and gave him a base hit. I vaguely remember the conversation turning to 'batter intent'. The 'official scorer' isn't wrong with either call, it's however he decides to judge the play. Vince Coleman comes to mind, but it seems like it was longer ago than that.
OOTP scores earned/unearned runs the same way every time. In this case, OOTP sides with the least common scoring result.
