Upgrading my OS to Big Sur corrected the "choppy" game play in Catalina, but I still wouldn't call what I get smooth. Play just seems to "jump" in odd, disconcerting fashion. It's playable now, but just doesn't seem quite right to me.

The “follow ball” setting has always been really “jumpy” for me. Try turning that off and see which you prefer.
The dynamic camera setting changes the camera angles dynamically as the play progresses. When you turn it off, the angles should stick to what you have set in your options.
