Are you using 20-80 ratings or 1-100? That would make a big difference when you're talking about 75+...
Even if you're talking 75/100, that's not outstandingly poor, there's not that many truly elite defensive catchers (who can also hit at MLB level, at least). Do your SB/CS/passed balls/etc. seem to be incredibly off? Are players stealing with impunity? If not it's probably fine. It's just ratings.
