As you can see on the player editor page (in commissioner mode), the injury rating is now broken down into several injury ratings. You cannot see it otherwise however.
Clutch is unfortunately gone as far as I know. Maybe it is hidden, but I doubt it. Real effect or not, the perceived effect added to the game.
Consistency is also gone, I believe, but I feel as though intelligence and work ethic take its place in what it used to do. I don't know if they have nearly as much effect (on dev), but if they don't that's probably a good thing. "Consistency" was an awkward rating anyway. Does it really matter if a player is consistent or not if at the end of the season they have the same stats? Intelligence and work ethic have much more meaningful understandings.
Reading the OOTP2007 manual I think one could argue that clutch has been replaced with intelligence ("... influence in game decisions...") and consistency with work ethic ("... positive effect on ... slump management..."), but that these new intangibles are more important as they come into play in more than just those limited circumstances as the full description details.
