If I understand your question, they will hit just like any other player with the same contact rating. Take a look at hitter ratings. In some cases, there are pitchers who hit better than some of the scrub batters on a roster.
They're not penalized just because they are a pitcher. It will be based on the rating, just like any other player. |

And they go into the game as a "PH". They don't have to throw a pitch.

If anything, they're gonna play the position of the person you subbed them in for.

Interesting you should ask this. I have an average to poor pitcher on one of my R level teams who can't play another position but has some of the best offensive ratings on the team. Much to my dismay, the game's depth charts do not allow me to insert him into a bullpen role and have him DH a few times a week. Maybe this calls for the Suggestions Board!

Some pitchers were actually used as pinch-hitters in real life - Bob Gibson and Earl Wilson to name a few.

In response to my own statement, Earl Wilson should have excelled as a hitter - he was originally a catcher.
