Could be interesting.
Using quick start
And OOTP 19
Single season sims of 100 sims
The Texas Rangers and Elvis Andrus and Tommy Joseph

Player Height and Weight: Wins, Runs, ERA
Andrus at 6' 200 lbs: 75, 832, 4.90
Andrus at 7' 200 lbs: 75, 827, 4.88
Andrus at 5' 200 lbs: 75, 827, 4.87

Andrus at 6' 200 lbs: 75, 832, 4.90
Andrus at 6' 250 lbs: 73, 835, 4.91
Andrus at 6' 150 lbs: 74, 834, 4.92

It appears that height and weight do not impact performance for SS.

How about 1B
Joseph at 6' 255 lbs: 75, 832, 4.90 (note: 1B = 60)
Joseph at 7' 255 lbs: 74, 828, 4.89 (note: 1B = 80
Joseph at 5' 255 lbs: 73, 844, 4.98 (note: 1B = 35)

Having an extra tall first baseman, didn't seem to help very much
Having an extra short one, did have a bit of a difference.

EDIT
Added an OFer using OOTP20
The Philadelphia Phillies and Odubel Herrera
Sims of 100 seasons

Herrera 5'11" 86, 706, 4.05
Herrera 7' 87, 711, 4.07
Herrera 5' 87, 710, 4.07

No obvious differences with OFer height.

After some question about LF defense, I decided to run my own test

OOTPXX
Quickstart
Los Angeles Angels vs Toronto Blue Jays 16200 games simmed (100 seasons)
Injuries, suspensions, development, scouting, etc off

The test subject was Brian Goodwin

With ratings of 200,200,200 in the editor (resulting in an 80 rating in LF (80-80-80))
Then with ratings of 50,50,50 in the editor (resulting in a 30 rating in LF (35-35-35))

GOODwin: 8816 wins, 70336 runs, 4.10 ERA
BADwin: 8405 wins, 74056 runs, 4.31 ERA

So, differences of:
4.1 wins per season (411 wins)
37.2 runs per season (3720 runs)

My test did not confirm Argonaut's findings for the importance of LF defense.
