Adding Great Britain?
Is there a way to create Great Britain in-game so that instead of England, Wales, and Scotland all having their own international team, there's just one combined team? Thanks

Yes, but it would take a substantial amount of editing the world_default.xml file. There is a flag for it in the database I noticed.

The easiest thing is to make them a region. The modded worlddefault file that's in this channel already has one in there, but assuming you didn't want to use that, you'd just need to edit the world_default.xml file to make the region. You'd have to change the region id based on how many you have though so it'd show up and make sure the nation id's also correspond in your stock file, but..this is the code.

This wouldn't help your national team problem, of course. Dogzilla is right, in that you'd have to essentially create the UK and turn the constituent countries into states. The copy/paste merging isn't that big a deal, the big issue is making sure all the IDs actually work how they're supposed to. But I think I've managed to do it. Give me a few minutes.

So I just did it. I did not replace Scotland, England, Wales, Northern Ireland as separate countries nor did I add any of the territories to the UK (which would be ideal, I guess) but besides that, I seemed to have created a United Kingdom that the game recognizes in Europe.
I'll leave it to someone else to give all Northern Irish players dual citizenship with Ireland for sports reasons, but...it seems to work. I just took the omnibus edited file from Dogzilla and added the UK as another nation. The tricky part initially was make sure it was added to Europe, but it recognizes it and I made my British League a British League instead of an English one and it works. (That is the modded version of the world default db. If you prefer not to use that, open that file, copy out the United Kingdom and paste it into your default world default, but 1) back it up and 2) make sure the nation id is accurate for your file since there are fewer nations in the game's default db. Also I mistakenly named the Great Britain as abbreviated GBR and that's what the game uses for Gibraltar so you'll need to fix that to GRB.

Just to be clear, GB and UK are not the same thing (the OP correctly didn't include Ireland as part of GB). I think the attached image explains it all best. I was confused on this for the longest time.
