Un-Retire a player
When Unretiring a player can I choose which of his seasons to use. Or is it always current age and ratings?

Current age and ratings. If theres a way to use something else that would be cool. I'll unretire Babe Ruth tomorrow.

The must have the ratings for the historical leagues.

You'd have to import the player to do that
