Alltime great teams....For Ex. The RedSox would have a roster of Williams .400 season and Yaz's triple crown year. So each team would have their all-time great(s) and their best single season on it??

Yes. If you go to the OOTP Start Screen and click "New Quickstart Game", there is a quickstart called All Time Greatest. If you are in a saved game, you can also click file, and there is an option to load a quickstart game from there under label called Quickstart Game.
