You can edit player in commissioner mode, which is only available in the 'Sandbox" game and only as soon as you start the game and on every July 1st thereafter. To start commissioner mode go to your manager options once you've started a new Sandbox game.

But as to missing players, if you can let us know the league you're interested in and the players we missed, we'll do our best to add them asap.
