Noob question: How do I generate a schedule for a custom league?
Apparently I have to do it on July 1, which is indeed the in-game date, but I don't see any button I can click to generate the schedule...

I'm getting "It's not possible to change the league structure of the HOL".

What's the most teams that a newly generated schedule can handle(including NHL)?

Try adding one more team to the league and see if that lets you create it, too. I'm wondering if it might be some specific odd number of teams the autoscheduler can't deal with.
