Shortlist

Dumb question, but how the hell do I add someone to my shortlist? There doesn't seem to be an option to do so.

Right Click (or on Mac, Control +Click) -> Add to shortlist.

It’s a great feature but what I’d love to have (in future versions) is more than 1 shortlist like in OOTP. That way I can track more than one group of players throughout the season.

Go to the roster screen and and click create new short list.

I actually found this was empty when I first loaded the game (so I had to start a shortlist using the method redtiger described, then I could add people to it). Would be nice if there was a default shortlist created.
