"Real Life Stats" is the default in most of the default historical modes. I would not expect the game to be training players at new positions if that option is selected.
I've always wondered how that AI Evaluation option would work, but I've never tried it.

This seems like a very sensible approach! And would be much more realistic than sending a player into a magical mystery box and hoping they come back knowing how to play a new position.

Another way to do it would be to have a "successful" result lead to experience gain at all relevant positions (so improve infield skills gets you experience at all four positions), but to have the underlying skills only improve with an "outstanding" result.
