Starting Over

Once I complete a custom season, what is the best way to replay the season and retain the same rosters, player ages, etc. as before? For instance, if I set up a custom league as "2011", can I replay that same season under the same conditions, without having players age or retire?

If not, is there a way that I can start a season over that has already played, for instance, 80 games of a 154 game season?
