New games 'normally' go live at midnight on the day of release in each territory around the globe but this can be +/- several hours dependant on what Apple are doing with regards to the volume of releases and server maintainance.

Will other aspects be as easy to customize as the logos? I'm thinking the databases that support fictional leagues, for example.

Check the aspect ratio of the images, ensure they're the same as the default.

BTW, the iOOTP directory structure is basically identical to OOTP. So, it isn't hard to access files.
