How do I get the game to pause and tell me when any team has a transaction? Release, Signing, Trade, injury, etc...???

I think you'll have to monitor the 'global' transaction log. It's under reports I do believe.

That forces you to go day-by-day. Considering all the transactions that take place, that might not be a huge drawback.
