So what's going to happen with Christian Bethancourt?

Well, if you didn't know, Christian Bethancourt is taking "super utility" to a new level this season. He is attempting to be not only a Catcher and a Reserve Outfielder, but as a Relief Pitcher for the Padres in 2017.

So, taking that into consideration, what will happen in OOTP18 with him and prospective players like him? I know we have those "two way" players, that are both profiecent in pitching and as hitters, but they usually develop into either a pitcher or a hitter, never both. Will we have the option to use him both as a catcher and a reliever in 18? Is that even possible?

He'll probably have decent pitching ratings, but the AI won't use him as a pitcher unless forced. Same with any other two-way player.

one would think he has a terrific arm as being a catcher would have decent accuracy in his throw but his range as outfielder would be suspect and as pitcher would have decent gitty up on the ball but what can he throw besides fastball and changeup ??

Who needs anything but fastball/changeup if he's pinging 99 as is being reported? He's going to be a one inning guy, FB/CH relievers who hit 99...

1) In terms of his ratings, the general approach to this sort of thing is "we'll belive it when we see it." He'll have passable RP ratings but likely not ones that make him really useful. Obviously, that could change.

2) If you are managing the Padres, you can do this now. I have done it multiple times in past OOTPs.

3) If you want the AI to properly use him in a dual role, that won't happen. Markus is also in a "believe it when he sees it" mode, and until there are multiple guys really doing this IRL, it's not gonna happen in OOTP.

Don't we technically have "multiple guys" in this kind of role now, if we count Otani as two-way?
