If I start a new standard game when I get 26, what would be the start date?

You can start any season you want.

We always aim to have the rosters as up to date as we can. Obviously as things change in real life we'll try to keep things updated when we can. I believe the default start game for a new MLB game will be March 14, to give you a few days before the season begins to settle in.
