Is there a way to create a travelling team a team that has no home stadium and just plays road games Minnesota Mud Puppies of Northwoods league as an example

No simple checkbox for this. It would have to be a custom schedule that you build or have someone build for you. Plus because ootp randomizes the schedule each year you would have to re-load it every year so the team sticks as a pure visiting team or else it will rotate to others.
