I was wondering how/if market size and fan loyalty affect attendance at games

They both have a significant effect, but the attendance formula also takes a lot of other things into consideration - the day of the week (weekends are better), ticket prices, team performance, etc.

So then how does editing average attendance affect it? Is that the number that it all revolves around? And are attendances increased during the playoffs?

Yes, that's the base number and the others adjust it up or down to arrive at the final one. And there is a playoff increase.
