Why the roster set is old (Pujols with LAA, Odor with Rangers, etc) when I start a New Standard Game with the latest patch.

Yes, this is to be expected. The Quickstart and default New Standard Game use Opening Day rosters. If you want updated rosters, you need to select New Standard Game and then choose the 'Live Start' option.
