International World Series?
I am just curious if this is possible in OOTP 16 but I would like to set up a series between Mlb World Series Champions vs the Nippon League Champions in November, is this possible? To go further on this is it possible to set up like a champions league(like soccer) tournament in my ootp universe?

Yes just start a league association between the two leagues and choose the option to have championship series Betwen the two winners.

You'd have to use the Associate feature and associate the leagues. Then you could do this.

And then, unfortunately, you should pray that it doesn't mess up the history of one of your league (usually the second one), as the example below shows.
Slightly OT see this post I had since the same problem with playoffs enabled for both leagues. I reckon it's a bug. I'd never seen this before OOTP16, and I don't know if it's been fixed yet.
