Financials On, No FA

What happens to players on your roster when their contract expires if there is no free agency but financials are turned on?

The reserve clause kicks in and players automatically re-sign a one year contract year after year. That's how it is in my league that has no free agency. All players have automatic one year contracts. However, in my Independent Circuit (part of same league) which has free agency, players have various length contracts.

That's interesting. Does the amount of the contract vary year to year? Or does it simply remain the same every season?

It varies.

In my FA-off universe that I ran for ~7 seasons, I saw my aging superstar go from a ~$100k contract (one of the league's biggest) to a ~$25k contract as his role and stats decreased.
