So when I started a new game, went through the inaugral draft, all my players ended up on the DFA

The game should have asked when the draft was finished if you wanted the Computer to set up your rosters for you.

You could also go into Game Setup -> League Setup and under the functions button there should be a Run Computer Manager on All Teams option that will do the same.

I hit no, because I knew exactly how I wanted my team to be and felt like I didn't need help.

I didn't know that choice meant everyone was DFA.
