Is there a way to set up and Inaugural draft with real players instead of fictional players?

Yes, create a historical league, not a fictional one.

There are many settings that you can tweak, to fit your version of major league reality.

If you want to use current players, create a New 2008 Major League Game from the opening screen. Then go to the Game dropdown menu > Game Setup > League Setup and find the Release All Players And Schedule Inaugural Draft, which is the third option down, I believe.
