If I'm a GM of a team, can I manage it during a game? Like substitutions or anything? Thanks.

Actually, the game assumes that you will be managing game-by-game if you choose not to auto-play. This is evidenced by the defaults being always set to you, the GM, instead of your manager AI for offense, pitching, defense and substitution strategies on the options page before each game. You have to delegate one or all of them to your manager AI in order not to be in control. BTW, you can change back and forth during the game as well.
